Irish Blue Cheese, Rib Sticking Sauce

Serves 2-6


150 ml of Port
150 ml of Cream
Blue Cheese for example Cashel Blue or Wicklow Blue

Cooking time:
15 minutes


Combine the blue cheese, port and cream and reduce for about 15 minutes over a moderate heat. More cheese, port or cream can be added depending on the consistency you wish to achieve.

Serving Suggestions: This sauce is ideal for using with Steak and Pork. It is also an ideal way of using leftovers. It can also be used as a dipping sauce for foods such as chips and pizza.
