Goats Cheese & Spinach Puff Pastries
One pack of chilled ready rolled puff pastry
One pack or about 200grms of Goats Cheese for example Cooleeney Gortnamona Goats Cheese
6 teaspoons of red pesto
6 small slices of grilled red pepper
A large handful of baby spinach leaves
Some milk and a pastry brush
Unwrap the pastry and cut into six approximate squares. Brush the edges of each square with milk. Put a teaspoon of red pesto diagonally on each square (they will be folded diagonally to make triangles, place your mixture on one side only so you can fold the pastry over). Place the grilled pepper on top. Whizz the cheese and spinach together in a food processor to combine and place a dessertspoon on each pastry square, do not overfill or the pastry will split as it cooks. Fold the pastry over diagonally to make triangular parcels. Press the sides of the pastry together and seal with your fingers or a fork. Brush each parcel with some egg and place on baking parchment on a baking sheet and bake at 200C for about 15 minutes or until golden and crisp.
Serving Suggestions: This is great with a green salad and some chutney or relish.
