Fried Goats Cheese with Honey

Serves 4

4 Medium Sweet Red Onions (Sliced finely )
100ml Olive Oil
80g Sugar
240g soft goats cheese for example St Tola Goats Cheese
1 Egg (Beaten )
50g Flour
3 tbsp(Metric) Honey (liquid)
1 tsp Parsley (Finely chopped )

Cooking time:
30 minutes

Fry the onions over a medium heat in olive oil until really soft and sloppy. Drain the excess oil, add the sugar and stir until blended over a low heat for about 8 mins until caramelised. Arrange onions on a plate and refrigerated for 1/2 hour. Take the cheese and form into 8 equal balls. Dip each one into the egg and then into the flour. Heat enough oil to cover the bottom of a pan. Fry the balls in this just long enough to get a golden colour. Remove onions from fridge and place the fried cheese in the middle. Drizzle honey over everything and sprinkle with finely chopped parsley and decorate with chive stalks.

Serving Suggestion: Serve with a glass of Manzanilla sherry
