Filo Triangles with Goats Cheese & Red Onion

These delicious puff pastry triangles can be used as a canapés, starters or serve with salad for a light dinner or lunch

Serves 2-4

200g puff pastry
20g butter
1 red onion
1 clove of garlic
100ml red wine
1 tbsp Balsamic vinegar
1 tsp honey
100g soft goats cheese for example Ardsallagh

Cooking time:
30 minutes


Cut the red onion into slices and fry in the butter with the garlic. When the onion and garlic are cooked add the wine and balsamic vinegar and reduce the liquor until it has almost all gone. Add the honey and season with salt and freshly ground black pepper and set aside. Thinly roll the puff pastry and cut into small (or large) triangles. Top the pastry triangles with generous amounts of cheese followed by the onion mixture. Bake at 200°C for 10 minutes or until the pastry has cooked.
