Eggs Purgatory with Semi-firm Goats Cheese Toasties
This recipe is perfect as a snack.
1 onion chopped
1 clove garlic
1 jar of Passata
Sprig of thyme or fresh basil
Crusty bread slices
150g Semi-firm Goats Cheese, for example Knockdrinna Meadow or Gold
Sweat the onion and garlic with olive oil and a pinch of salt, pour in the passata and season to taste. Let it simmer and reduce. 5 minutes before serving, crack the eggs in the tomato sauce, and let them cook on a low heat. Cover if necessary.
Serving Suggestion: Serve with toasties with grated semi-firm Goats Cheese.
