Cheese Tartiflette

Serves 6

I kg of potatoes
1 medium onion
250g diced smoked bacon
20cl white wine
600g. of washed rind cheese, for example Durrus cheese

Peel and cook I kg of potatoes (20 mins approx), until easily pierced with a skewer or a knife, drain and, when cooled, dice.
Sauté 1 medium onion, thinly sliced, until golden brown. (5 mins approx), add 250g diced smoked bacon and cook for another 5 mins.
Add the diced potatoes and 20cl white wine, salt and pepper and cook for 10 mins approx on a low heat.
Place half the mix in an oven proof dish. Spread 300g. of washed rind cheese ( sliced and rind removed) on the mix. Layer the remaining mix on top and cover with a further 300g of cheese.
Bake for 20mins at 180 C., until golden brown and bubbling.

Serving Suggestions: Serve piping hot, (with salad)
