Blue Cheese, Leek & Rocket Frittata
4 leeks, sliced
25g / 1oz butter
A handful of rocket
75g / 3oz Blue Cheese for example Wicklow Blue cheese , diced or crumbed
Sweat the leeks in the butter until soft. Lightly whisk the eggs together, and then mix in the rocket, cooked leeks and some salt and pepper. Heat a 30cm / 12 inch lightly oiled ovenproof frying pan and add the egg mixture. Cook on a medium heat, loosening the mixture from the sides of the pan, until set around the edge. Scatter the blue cheese on top and transfer to an oven preheated to 150 degrees C / 300 degrees F / gas mark 2 for about 10-15 minutes, until firm.
